Veg Lemon Coriander Soup!!! 🍲
*Carrots (finely chopped) – 1 small
*Capsicum (finely chopped) – half
*Onion (finely chopped) – 1 small
*Spring onions (finely chopped)
*Chillies (finely chopped)- 1 or 2
*Ginger Garlic paste – 2 tsp
*Lemon – 1
*Water – 2.5 glasses
Pour little oil in the pan (don’t pour a lot). Throw in the carrots, chillies, onions and ginger garlic paste. Mix all of it till the smell of the ginger garlic paste fades.
Throw in the capsicum when the carrot starts to soften. Fry it for a minute or two.
Then pour in the water. Now when it starts to boil, we will add salt, pepper powder, lemon squeezed and lemon grass (optional). Let it come to a boil and then add lots of coriander leaves as per your taste and spring onions. Give it a nice boil and your soup is ready.
- If you want your soup to be dense then add cornflour.
- However for non veg you can boil chicken and use the shredded chicken from the same and use the chicken stock instead of water!!!!
